Vegan – gluten free – healthy – Rosti

This recipe was written by NO Whey! on their Facebook Page, and was made with our organic vegetable boxes.

The breakfast food of gods! ????

????3 medium potatoes
????1 large carrot
????1/2 onion or 1 small onion
????Tablespoon dried herbs like parsley
????Tsp garlic powder
????Salt & pepper

Heat oven.

Wash and grate all veggies into a clean tea towel. Squeeze all water out by twisting the towel around as much as you can.

Put into a bowl, add herbs, garlic, salt & pepper to taste.

Shape rostis by hand into a burger shape.

Heat 2 tbsp oil of choice and then fry until golden (4 minutes each side).

Put on baking tray and bake for 5/10 minutes until hot all the way through.

You can use other veggies in this like courgette, squash, swede etc.

Plonk it on your breakfast, make them into a sandwich or just put it in your face ????
